|Since Domaine de Courteillac began taking the advice of Stéphane Derenoncourt, the wines have gained in finesse, elegance and roundness.
Oak aging has been reduced. It no longer marks his wines in this way. He simply plays his role as ‘’tamer of tanins’’.
On tasting, he becomes discreet. Nothing is overstated. A harmony that allows Dominique Mèneret to liken his wines to the finesse of cashmere or to the suave and deep voice of Norah Jones. And when you ask him about matching food with his wines, he responds ‘’my wine is to be enjoyed with everything, it’s a matter of taste.’’
